Great Drache! Yeah, the defaults.cfg that's in "Program Files/Osmos" is the default config -- it only gets used if MyDocuments/Osmos/Config.cfg is missing (which is the case, for example, when Osmos is run for the first time). If you ever want to revert to the default settings for the game...

We've not yet started on a Linux version of Osmos. It's on our list of "Things we'd like to do with Osmos". Needless to say, we've been really busy up to this point just getting Osmos out the door!
